I have this “issue”, where I start doing various tasks and become obsessed with completing them at that specific moment when the idea pops into my head. One morning while searching for something in the pantry, I decided that I was going to clean out the pantry. Now, it did not matter that it was 7:30am and I should have been blow drying my hair, and it definitely did not matter that I was trying to leave my house in 45 minutes. Nope. I was going to clean out the pantry. These “issues” tend to become problems real quick, especially when they include tasks that require organizing, checking expiration dates, and oh… umm I don’t know, when it is a Tuesday and you have a job you need to be at in 45 minutes!?!?

While cleaning out my pantry, I stumbled upon a can of oats. Can of oats? Is that correct? Tub of oats? I probably should have just threw them out, and moved forward with my “issue” of cleaning the pantry at 7:30am on a TUESDAY! But no, in comes in another type of “issue” – the “issue” of making something out of nothing. These oats meant nothing to me. Nothing. I did not know these oats, hell, I did not know how they got into my pantry (maybe that should have been my first question?) – but I knew these oats had the potential to do something great in my life. Drum roll please ….

Introducing No Bake, No Problem Cookies! So to sum it all up, because I am beyond rambling, I spent the rest of my morning, discovering all of the ways you can use oats. And let me tell you, there are a lot of ways. However, my favorite involved chocolate and peanut butter.

After trying out the recipe I found on Pinterest and having the final product approved by Joey and two close co-workers, I felt I had to share. But, what I love most about these cookies, is that they are beyond simple to make and literally require zero baking. Hope you enjoy xo

Ingredients

  • 2 cups sugar
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 1/4 cup cocoa powder
  • 3 cups oats
  • 1 cup creamy peanut butter
  • 1 tablespoon vanilla extract

Instructions

  1. In a large pot add sugar, milk, butter, and cocoa powder. Slowly bring to a boil while whisking. Once at a boil allow to boil for one minutes (I set a timer and stopped the whisking).
  2. Remove from heat and add in oats. Mix well. Add in peanut butter, mix well. Last add in vanilla extract and mix well. 
  3. Lay out parchment paper on the counter and spoon out the dough into cookie shapes. Allow to set for 15-30 minutes.
